The Perfected Black Velvet

Here's a Saint Paddy's Day tip: "Black Velvet" is a mixed drink that is usually prescribed as a 50/50 mix of Guinness and Champagne. But if that's a little too emasculated for you, make it my way: Instead of an even mix, "spike" a glass of Guinness with about two shots of Champagne. That's just enough to balance the sourness of the Guinness, without making the drink taste like Champagne.
